have been told when i go back I will have it cooked for me :-)

I've had pinakbet a few times, but I don't find it particularly nice. When my wife's famly cook it, it's like vegetables mixed with bagoong.

Granny does a really good version, in our house it's always cooked with shrimp not shrimp paste, when I am there we eat this dish a couple of times a week, I like it.

Ooo Pinakbet :hubbahubba:

My wife cooks a fantastic Pinakbet. I'm not the only one who just loves it.

It's a little bit different from 'regular' but then again there are so many 'local' and 'special' versions.

Try this one.

Ingredients:-

Pork (cut into small pieces)

String Beans (French Beans)

Pumpkin sliced to bite size cubes

Shrimp (skinless)

Eggplants, sliced to bite size pieces

Okra

Garlic

Onions or Shallots

Soy Sauce

Coconut Milk

Cooking method:-

Sauté the garlic and onions
Add shrimp, squash and water.
After a couple of minutes, add everything else.
Add coconut milk and mix.
Simmer
Taste, season and when happy serve.

Lol! Tell us how it goes! Do you have your own version/recipe of it? I find that with a lot of recipes there are quite a few different version such as Adobo. I don't see any harm in trying out adding or taking away certain ingredients-just what ever makes it taste the best for you!
