One of the many "challenges" us westerner's can find ourselves facing, is learning to appreciate the local foods. While I genuinely like almost everything I've eaten, some things will never pass my lips again.
Just one of my favorites is Sinigang na Baboy (boiled pork in a Sour soup) not only a true Filipino classic, but very tasty too!
Ingredients:-
pork ribs
Tomatoes, sliced
Onion, sliced
radish,(or mooli) cut into slices
Green beans (String beans)
Spinach (or chinese cabbage or pointed cabbage)
tamarind
Cooking method:-
Bring the pork to boil.
Add the tomatoes, onion, tamarind and some salt.
Simmer for about 1 hour until the pork is tender.
Season to taste.
Bring to the boil again.
Add the green beans and the sliced radish.
Simmer for about 10 minutes.
Add spinach and cover and just simmer for 1 minute.
Remove from the heat and allow to stand for 5 minutes until the spinach is just tender

My wife has been doing sinigang recently. With prawns. I like it. Hard to get tamarind but she uses a Knorr Sinigang mix.

Is it possible to buy tamarind on its own?

Is it possible to buy tamarind on its own?
Maybe not on IOM. But should be easily available online.
It's possible to buy in paste form also.
To be honest though lastlid, the Knorr Sinigang mix is pretty comparable.
Real Tamarind gives a little bit strong edge that you may not like.

Yep, I don't like much pork fat either. I actually prefer Sinigang na isda sa miso. much healthier :xxgrinning--00xx3:

Your virtually right. We do have a shop that sells some Asian foods and that's where we get the Knorr Sinigang from. Ironically its called Robinsons LOL. But you can't beat Manchester for a good selection of Asian foods and I am sure we could get Tamarind there. My ex wife (Jockanese lass) used to buy from the Asian food shops in Manchester regulalry for exotic ingredients.

Yeah, we also substitute pork with salmon (on the bone of course) and also add lots of KangKung (often called Morning Glory in Asian shops).
Very tasty.

Important, just be sure not to overcook the salmon. Leave the salmon in portion sized chunks.
Also you might consider substituting spinach/cabbage with watercress, or even half-half watercress.

Cheers. We have been using baby spinach leaves.
BTW the wife says salmon is expensive in Phils. Is that correct?

When our daughter was here in UK last year she said that Salmon was very expensive.
(mind you salmon is expensive just about everywhere imo)
She was also amazed at the variety and low cost of pasta here.
Seems that good quality spagetti etc is very cheap here. We've starting send over in our BB boxes.
Maybe someone else can comment on that?

I was talking to my wife on the net this afternoon. She comes on here occasionally to have a read. She said I saw your replies on the post about sinigang. You know what she did? She took the laptop to the stove and showed me that she was cooking it. She knows I love it. What kind of a wife does that to you? Obviously I told her I was going to kill her when I go over in May.:laugher:,

The key is to cook the meat and reduce the fat to as close to zero as possible. That way to secure all the flavour but none of the fat. Simples:xxgrinning--00xx3:

I've done Sinigang na hipon (prawn) and sinigang na manok (chicken) before and love both! I used the Knorr one for the prawn version and a Mama Sitas for the chicken version. Got some in the freezer and the last time I did the chicken version a couple of weeks back, I made so much that it wouldn't fit in my large wok, so had a medium saucepan and large wok full of it, with only little me to eat it all! :icon_lol:

I'd be the same! That's the only thing with some Filpino food I don't like-too much fat and bones still there! :D
