And why did she live outside the UK for over 2 years if she was a loving mother/wife and wanted to be with her immediate family....?

They only tell you have the story the part that makes everyone else wrong and not themselves.
I have been trying to find out more but i seem to have hit a wall.

It's very tough and IMHO a little unfair without knowing all the details.
Seems she had at least 2 years continuous absence out side UK and lost her ILR as a result.
The indication being that she had been in and out on visit visas since
There's likely a lot not being divulged.
She could have secured Citizenship years ago at virtually no cost.
We'll never know both sides of the story
