I've been trying to cook different recipes of Adobo. So far this is yet the best recipe I have tried (see recipe below)... They said that there are no two adobos alike...

PORK ADOBO/CHICKEN
1/2 kg Belly Pork or Pork Rashers or
Chicken
1/2 cup vinegar
1/4 cup soy sauce
15-20 black peppercorns
3 garlic cloves
2 bay leaves
2 tsps
of chicken gravy (instead of corn flour)
1 tsp sugar
1 tbsp water
1 small can of pineapple(includding the syrup)
1) Slice the pork into cubes. Put in the pot.
2) Add the bay leaves, peppercorns, garlic, vinegar & soy sauce.
3) Turn the burner on, simmer and cover for about 25mins or until the meat is tender.
4) On a separate bowl, mix sugar, corn flour & water.
5) Put the corn flour mixture in the pot and let is simmer for another 10mins or until cooked.
6) Served hot with steamed rice
