As you are self-employed I would suggest you consider including certified copies of past couple of years tax returns. Perhaps also include a certified copy of the business accounts. Other evidence might include copies of any ongoing or current contracts that show how much is being paid to you.
As I said in other posts, the ECO is not an accountant. They just need to easily see that you have sufficient disposable income.
A good guide is to show that after all KEY/legal payments you have at least £103 per week disposable income for a couple.
I would not recommend that you include any bank statements that are overdrawn.
Also, I always believe being able to show some savings does help.
The ECO will know that your wife will be unlikely to find employment in the short term.
However, if she does happen to have a job offer then also include that.
Just do not provide any documents that show debts
