I love Pinakbet
Here's our version, not quite the totally traditional version but very tasty.
Ingredients:-
Pork (cut into cubes)
Green Beans (French Beans)
Pumpkin (cut into cubes)
Shrimp (Peeled and Headless)
Eggplants (bite size pieces)
Okra
Garlic
Onions or Shallots
Chillies (Optional)
Soy Sauce
Coconut Milk
Cooking method:-
Gently fry the garlic and onions
Add the shrimp, the pumpkin and water.
After just 2 or 3 minutes, add the rest of the ingredients.
Pour in the coconut milk and stir.
Simmer
Season to taste if required.

pork belly (cube)
anchovy sauce(bago-ong isda)
garlic (minced)
onion
ginger(luy-a)
pumpkin(kalabasa)
okra
bitter melon(paleya)
snake beans
eggplant(talong)
Magic All-In-One Seasoning(optional)
soy sauce
Procedure
in a pan medium heat cook the pork until cook
stir the onion, ginger, garlic until the smeel aroma comes out
slowly add the vegetables ..first the pumpkin, beans, bitter melon, okra and finally eggplant..then the magic sarap and bit of soy sauce..simmer for at least 10 min in low fire until the vegetable cook but not overcook
best eat with fresh steam rice and fried tilapya sarap
