If you're feeling adventurous you could magic up a wonderful Cassoulet
It's nice and easy to cook, enough for a group, and tastes great the next day too
Here's my very quick and easy version:-
ingredients:-
• 2 x 400g tins of borlotti or cannellini beans (or 1 tin of each)
• 500g sausages of your choice (cut into 1 inch slices)
• 8 thick slices of streaky bacon (sliced into very coarse chunks)
• 1 turkey leg, skin removed and diced
• 3 x 400g tins of plum tomatoes
• 1 1/2 cups chicken stock (or chicken soup)
• 2 tbles extra virgin olive oil
• 1 large red onion, coarsley chopped
• 2 cloves of garlic, finely chopped
• 1 large carrot, 1/4 inch slices
• 3-4 sprigs fresh thyme, (or 1 tsp dried)
• 2 bay leaves
• 1 sprig fresh rosemary (or 1/2 tsp dried)
• Couple of celery sticks, finely chopped (optional)
• sea salt and freshly ground black pepper
• Chilli pepper to your choice
Method:-
Preheat your oven to 200˚C / Gas mark6.
Very lightly fry the sausage in olive oil.
Fry the bacon and the turkey leg in the olive oil until crisp and golden.
Transfer the bacon and turkey leg to a casserole dish and add the thyme, bay leaves and rosemary.
Add the onions, garlic, carrot, celery, tomatoes and beans.
Add the chicken stock to cover (top up with hot water if needed)
Bring to the boil and simmer for 15 minutes.
Lightly season then lay your sausages on top so they can get nice and brown as they cook in the oven.
Add a little salt,black pepper and chilli pepper to your own taste.
Cover the dish, place in the oven and cook for around for about 1 hour
Remove the cover and continue cooking for about 15 minutes until the sausages are golden and crispy and the beans begin to split and release a little starch into the liquid.
Serve with rice (or fluffy mashed potato, or fresh crusty bread).
