I can't offer you any advice Stu as I've only been to the Tagaytay/Talisay/Taal area a few times as a tourist on day trips. Although it's a beautiful area, and close enough to Manila if you need to get to the airport, go shopping or require medical treatment. Definitely somewhere I'd consider
