You can either obtain a 59 day visa before leaving UK or you can get one at Manila airport when you arrive.
There are a number of members who have done just that.
There is a posting here somewhere informing exactly where in the airport to secure the visa extension, but I just can't find it right now.

Hopefully those who have done it at the airport will respond.

Some folks might tell you to not bother with the visa and to just pay the overstay charges etc when you leave.
Please don't do that.

To get the extended visa at Manila, you need to go to the immigration desk, as normal, tell them you want to extend then you look to your left to a doorway, it is behind a pillar, so you may miss it. Go through the door and you will see some people behind the desk. Just ask for an extended visa, take a seat for 10 minutes pay the money and all done. From there you go back to the immigration desks and they stamp you into Phils for 59 days. Job done.

Or before your visa will expire you can visit the Immigration office in Intramuros Manila...

One thing to appreciate, some airlines will NOT let you board if your return flight is more then 3 weeks from arrival unless you already have the visa. I've experienced checks for that when boarding with Cathay Pacific in London, Cebu Pacific in Hong Kong and Asiana in New York.
