One of the many "challenges" us westerner's can find ourselves facing, is learning to appreciate the local foods. While I genuinely like almost everything I've eaten, some things will never pass my lips again.

Just one of my favorites is Sinigang na Baboy (boiled pork in a Sour soup) not only a true Filipino classic, but very tasty too!

Ingredients:-

pork ribs
Tomatoes, sliced
Onion, sliced
radish,(or mooli) cut into slices
Green beans (String beans)
Spinach (or chinese cabbage or pointed cabbage)
tamarind

Cooking method:-

Bring the pork to boil.
Add the tomatoes,onion,tamarind and some salt.
Simmer for about 1 hour until the pork is tender.
Season to taste.
Bring to the boil again.
Add the green beans and the sliced radish.
Simmer for about 10 minutes.
Add spinach and cover and just simmer for 1 minute.
Remove from the heat and allow to stand for 5 minutes until the spinach is just tender
