    Cool Pinakbet

    Here's our version of Pinakbet. Hope I remembered all the ingredients.

    It's not quite the totally traditional version but very tasty.


    Ingredients:-

    Pork (cut into cubes)
    String Beans (Green Beans)
    Pumpkin or Butternut Squash (cut into cubes)
    Shrimp (skined and headless)
    Eggplants (aubergine) (bite size pieces)
    Okra
    Garlic
    Onions or Shallots
    Soy Sauce
    Coconut Milk

    Cooking method:-

    Gently fry the garlic and onions
    Add the shrimp, the pumpkin and water.
    After just 2 or 3 minutes, add the rest of the ingredients.
    Pour in the coconut milk and stir.
    Simmer
    Season to taste if required.

    Mmm enjoy

    i cook pinakbet in different way

    1/4 kilo pork ribs, sliced
    4 cloves garlic, chopped
    1 onion, chopped
    1 ginger root; cut in chunks and crushed
    1 tomato; sliced
    2 cups squash; cut in cubes
    1 eggplant, sliced
    1 ampalaya
    5 okras
    3 cups water
    Bagoong isda
    Salt to taste
    Cooking oil

    In a casserole, sauté garlic, and onion in oil. Add pork, then season with salt. Continue sauteing until edges of pork turns brown and renders fat. Add the ginger and tomatoes. Stir well for few minutes, then add water and bring to a boil. Add ampalaya, eggplants, okra, squash, and string beans. Season with bagoong according to taste. Simmer until all vegetables are cooked. Serve hot!

    Have you tried Dinengdeng guys? I like Dinengdeng but I like pinakbet more.

    Dinengdeng is a dish of the Ilocano people of the Philippines, similar to pinakbet. It is classified as a bagoong soup based dish. Unlike pinakbet, dinengdeng contains fewer vegetables and contains more bagoong soup base.
