I got the recipe from the net but then i modified it to make it more yummy..our Clinical Instructors actually love this one, they said its unique..its the first time they ate a salad like this..

Yield: 10 Servings
Ingredients
•3 pounds sweet potatoes, cooked, peeled and cubed
•1 cup chopped green pepper & red pepper
•1/2 cup finely chopped onion
•1/4 teaspoon pepper
•Dash hot pepper sauce
•1 c. mayonnaise
•1 tablespoon(s) olive oil
•½ c. chopped celery
•1/4 cup(s) chopped fresh parsley
•½ t. salt
•1 Tbsp lemon juice
•½ c. carrots, diced
•½ c. Green peas
•2 Tbsp Sweet Pickle Relish
•½ c. Pineapple Tidbits
•2 Tbsp Orange Juice
•5 Tbsp All Purpose Cream
•4 Tbsp Cheddar Cheese, grated
•2 large hard-boiled eggs (see Tips & Techniques), peeled and coarsely chopped
Directions
•In a large bowl, combine all the ingredients except the egg. Then toss to combine. Gently stir in chopped egg. Serve at room temperature or chilled
