I got the recipe from the net but then i modified it to make it more yummy..our Clinical Instructors actually love this one, they said its unique..its the first time they ate a salad like this..

Yield: 10 Servings
Ingredients
3 pounds sweet potatoes, cooked, peeled and cubed
1 cup chopped green pepper & red pepper
1/2 cup finely chopped onion
1/4 teaspoon pepper
Dash hot pepper sauce
1 c. mayonnaise
1 tablespoon(s) olive oil
½ c. chopped celery
1/4 cup(s) chopped fresh parsley
½ t. salt
1 Tbsp lemon juice
½ c. carrots, diced
½ c. Green peas
2 Tbsp Sweet Pickle Relish
½ c. Pineapple Tidbits
2 Tbsp Orange Juice
5 Tbsp All Purpose Cream
4 Tbsp Cheddar Cheese, grated
2 large hard-boiled eggs (see Tips & Techniques), peeled and coarsely chopped
Directions
In a large bowl, combine all the ingredients except the egg. Then toss to combine. Gently stir in chopped egg. Serve at room temperature or chilled
