"Pork is not the only meat" would be a good title for a movie about Philippine cooking. I have nothing against the humble baboy, but not for breakfast, lunch and tea, every day of the year. Sometimes my mahal makes me shepherds pie made with beef which I appreciate, but what I really like is a bit of lamb (which she says smells funny). Unfortunately the price of lamb has made it a rare luxury. I had some diced lamb recently, medium-rare fried, smothered in mint sauce, what an experience!
Oh how I missed pork over the previous six months and I'm now in Spain enjoying it. Have had to educate our islamic crew though, unfortunately they are used to beef Salami, and assumed that all Salami was made of beef. Also many of the dishes here in spain that involve ground beef such as burgers or spaghetti bolognese constitute of half pork/half beef. I'm guessing the Spanish influence on the Philippines encouraged the love of pork.
I just miss my ham sandwiches when living in the middle east, or bacon sarnies. With that being said, we mostly use poultry for pretty much anything now. Chicken Adobo, Chicken Caldaretta, Chicken Afritada.....
Actually I'm very fond of pork, it's very versatile.
I especially like a nice pork belly
Slow-cooked to perfection with crispy skin and virtually all the fat reduced to zero together with sage and onion stuffing and apple sauce.
But my number one fave meat is lamb.
My wife just hates the smell and will never eat any. Whenever she cooks that stinky dried fish I take the opportunity to roast some lamb.
She's actually cottoned on to my cunning plan and tends not to cook dried fish quite as often as she used to.
I like pork for breakfast, usually in the form of bacon
Mind you I haven't yet found the perfect bacon in the Philippines.
It reminds me of the converse. Where pork was banned in the middle east. I recall taking pork sausages into Libya only to find them being confiscated if they found them on you as you passed through Immigration.....
awww. Oman is fairly reasonable, special supermarkets have Pork rooms if you desire pork, but its really expensive. Otherwise you can bring stuff in with you. But still miss it when we don't have it.
Well, as my body can't handle pork, it made eating interesting while I was there. Luckily my partner had pre warned them so there wasn't too many close calls. At least I had chicken to fall back on in regular supply!
