    Pinakbet!!

    yey , I finally cooked my favorite Ilokano recipe (pinakbet) here in the UK

    Pinakbet or pakbet is a popular Ilokano dish, from the northern regions of the Philippines, although it has become popular throughout the archipelago.

    my revised recipe from panlasang pinoy:

    3 pcs round eggplant ,quartered
    3pcs small bitter melon (ampalaya) quartered
    3pcs horseradish tree fruit (bunga ng malunggay) ,sliced and cleaned
    1/4 pumpkin cubed
    7pcs okra
    1 thumb ginger sliced
    2 pcs tomato
    1 large red onion
    2pcs green long chili
    1 cup water
    1 lb pork belly
    1/2 cup of small fresh shrimps
    1/2 cup anchovysauce (bagoong isda)

    Cooking Procedure:

    1. In a large pan, place a little water let boil and add the pork belly , let all the water go bringing out the fat/ oil from the pork belly

    2. Put in the anchovy sauce , small fresh shrimps and wait for the mixture to boil once more then add one cup of water

    3. Add-in the vegetables starting with the ginger, onion and tomatoes then the pumpkin , okra, bitter melon, eggplant, horseradish tree fruit and simmer for 15 minutes

    4. Add the long green chili on top of all the vegetables

    5. Serve hot with rice and fried fish!!!
