This is not as uncommon as you may think.
I have been helping some folks in this same situation. It really shouldn't present a major barrier, especially now that caseworkers will revert back to evidential flexibility.
The key issue is having an employer/HR dept who is open to providing a letter of compliance that simply confirms:-

a) past payment history since adoption of zero-hours contract
b) future budgeted/expected hours

Don't forget that UKBA can only make determinations on historical data. No employer can give any guaranteed future employment or pay details.

To be honest Sheldon, I have not so far seen any refusals solely due to this type of contract.
I've also strongly suggested an explanatory statement from both sponsor (you) and employer.
I must also be fair to you and state that I have not been involved in applications that could be considered 'marginal' (ie just about on the lower limit of £18600 income. Most have been around £20,000 or more.

Hope this allays any nagging doubts on your side.
