    Making wine in the Philippines

    Ok, I know the basics, I used to make my own drop of plonk in the UK, but here in Phils there are so many different fruits to experiment with I thought I would have a go again. My only problem will be finding the right yeast, but if all else fails, I will just use yeast for baking bread.

    So have any of you tried this? I am quite looking forward to it. The good thing is that even if it tastes bad but has alcohol content, my brother in law will drink it anyway lol.

    So what fruit shall I start with?

    My first batches were Papaya and Mango.. After 4 rackings it was as good as any white wine Ive ever tasted and I have friends in white wine country..Alsace !!
    I used Bread yeast for that batch and fermented in Gallon glass bottles..
    The 5 gallon water bottles are also good just make sure they are full to the top..(No air whatsoever)
    Put a large balloon over the neck with a pin hole in to release gasses.
    I was told to try Rambutan next time as they are about the closest thing to grapes in the R.P..
    I might even try Lanzones when they come into season and get cheaper.
    Obviously Steve..Find the coolest place in the house otherwise the fermentation process is a bit to fast.. Also I was told to drink it after 3 rackings as they reckoned after about 6 months the temp here might begin to spoil it..
    Thats what I did.
    Good luck.. but next batch try to get some Champagne wine yeast sent from the UK.. That stuff survives up to about 18% Alcohol!!

    Thanks Fred, we have lots of lanzones here right now I love them so they are always in the house, I was thinking about using one of those big blue water containers, you know the ones with a big screw top, and I was going to make a valve with some clear tube like a 'u bend' so nothing can get in and only gas out. Did you use ripe papaya? there are lots fallen right now after the typhoon.

    Yeah the water containers will work fine..just sterilise everything first..i use the stuff they clean baby bottles etc with.
    Yes..everything must be ripe or even a little over ripe..
    Try to follow an online recipe for sugar quantities..Unless you have a hydrometer??
    Loads of wine making web sites.. Best to have a good read before starting.. The tube will work fine BTW!

    This is something I've promised myself to take up when I eventually get there.

    Do you remember those days when Boots had a whole section on home brewing?
    Spoilt for choice then.....mind you their pre-packed beer packs never really tasted that good, but some of their wine packs were OK
    Don't know why but I always had better results from basics.

    This thread reminds to search for all my old recipes and get them onto storage disk.

    Glad you joined in here Peter, I might need to do as Fred suggested and read loads, or just pinch a few recipes from you. The sugar thing is my main concern, I don't have a hydrometer here and I sold all my wine gear before I left the UK.

    Top fruit to try are:
    Pineapple
    Lanzones
    Ranputan
    Mango
    Papaya
    or a mix of the above. I think Pineapples and Lanzones might be a good combo.

    As you read Steve you might find that Pineapple is not a good choice.. I have no idea why but I took the advice of the "experts" online and gave it a miss.

    Off on a tangent here not Philippines brewing.

    I remember my Dad making a lot of wine (orange & raisin was one of his faves) and going with him to 3 independent home brew shops in the local area and buying him bits from Boots for Christmas. The independents have long gone and I don't think Boots stock the products any longer - Wilko do

    I was reasonably successful doing beer and lager from a basic tin of concentrate but doing some sort of starter solution from liquid yeast in a poly bag in the airing cupboard. Happy days

    I did do some research about making beer here a while back.. Loads of Barley here but it needs to be germinated and sprouted before being brewed..
    I still to this day have not been able to find a decent alternative to hops yet but as I become less busy with other things it wont take me long to find one..
