    Fish source

Fish source what a horrible smell, and i was greeted by this the other day when i opened the door to the house,
Its one of those smells that just gets to the back of your throat and stays there, in fact i would rather walk around with a stale sock wrapped around my neck,
But Emma was telling me the truth, once its in the food it does taste nice its just the smell when cooking the food, what smells gets up your noses and dont say a fart smell either

... probably the stink whenever dried fish is being cooked. Although ... ... to be fair, that isn't done too often in our kitchen, thankfully!

Fish sauce is best when red chilies are cut up and added, then pour it over your meal...

Steve.. Believe it or not,if you know how to use it,its an amazing ingredient.
Try this for a Thai chicken salad dressing.. Everyone that has tried my Thai salad wants the recipe!!

Fish sauce (Patis) (couple of Table spoons spoons) in a cup.. Mix with lime juice until its tangy..Stick you finger in it to taste..If it still tastes too salty and strong, add more lime juice..
one hot pepper sliced and diced, two table spoons of vinegar..Then add about 4 table spoons of olive oil...give it a good stir and chuck it in your salad bowl..
I add it to lettuce, chopped onions, celery, carrot sticks, sliced tomatoes etc and add chopped pre boiled chicken breast.. Chill the whole salad in the ref..
If you dont like that..There`s no hope for you!!

Harlene will only cook it at her aunt's. It is banned here!
She thinks I don't know about her stash behind the tins and stuff in the kitchen cupboard!

Sounds interesting to me too. Have already added to my recipes 'book' and will give it a go soon.
