As can be seen from the form Appendix 1 It's a personal choice.
The form states:-
Some folks here have included it and some others have not. Depends on your personal circumstances and the current age of the child.2.16 If you are applying for indefinite leave to enter, has your sponsor completed and signed the Sponsorship Undertaking Form confirming that they will maintain and accommodate you without recourse to public funds for 5 years? See guidance notes for further details. Put a cross (x) in the relevant box
2.17 Have you submitted the Sponsorship Undertaking Form with your application? Put a cross (x) in the relevant box

If ‘No’ please give full reasons why this is not enclosed with your application below:
The Sponsorship Undertaking Form is really aimed at dependent relatives over 18 years of age.
It's hard to imagine just which public funds your child would claim.
Most claims on public funds in connection with a child would be made by yourself or your partner. Which you are perfectly eligible to do
If you child will remain under 18 for the next 5 years then no harm in including the form.
If you have any concerns please contact UKVI and ask them.
Sorry I cannot give you a definitive answer on non mandatory documents.
